Chickpea Harissa Wrap
This is a recipe from Animal Aid's website which they asked me to make a video to accompany it. Perfect for lunch or a snack.
- 1 can Chickpeas drained
- 2 tbsp Harissa
- 2 Spring onions chopped
- Chopped coriander optional
- Wholewheat wraps
- 1/2 can Sweetcorn I used frozen which I defrosted
- Romaine lettuce
- Mix the chickpeas with spring onion, harissa, coriander, salt and pepper. Spread some hummus on each wrap then top with the harissa chickpeas, sweetcorn and lettuce. Wrap tightly tucking in the bottom of the wrap to seal it.
Tip: Why not warm the chickpeas in a pan/microwave and add some dairy free cheese. I made 3 large wraps but if you want to make more bulk it out with more lettuce.
