
Lentil Spaghetti Bolognese
Another super cheap recipe using very basic ingredients. This recipe serves 2-3 and costs a bit over £1 to make.

Ingredients
- 1 tin chopped tomatoes drain off a little of the liquid
- 1 tin of lentils (or 240g coooked lentils) drain off liquid
- 2 tbsp tomato puree
- 1 tsp mixed herbs
- generous pinch of sea/pink salt
- season with black pepper
- 1 onion finely chopped
- 2 cloves garlic chopped
- 1 carrot sliced
- 1/2 cup frozen peas
- spaghetti
Instructions
- Fry the onion, garlic, peas and carrot in a pan with a little oil on a medium heat for 3-4 minutes.Add the lentils and tomatoes, turn up the heat and stir together.Add the herbs, puree, salt and pepper and stir again.Bring to a simmer and turn down the heat. Simmer for 10 minutes stirring occasionally.While the sauce is simmering get your pasta cooking so it's ready at the same time.Serve with the pasta and top with nutritional yeast or vegan Parmesan. Enjoy!

Tip: I drain off some of the liquid from the tomatoes. Why not add some chilli powder to spice it up a bit. My partner got me to add baked beans to his which weirdly was really nice.
