1tinchopped tomatoesdrain off a little of the liquid
1tinof lentils (or 240g coooked lentils)drain off liquid
generous pinch of sea/pink salt
season with black pepper
Fry the onion, garlic, peas and carrot in a pan with a little oil on a medium heat for 3-4 minutes.Add the lentils and tomatoes, turn up the heat and stir together.Add the herbs, puree, salt and pepper and stir again.Bring to a simmer and turn down the heat. Simmer for 10 minutes stirring occasionally.While the sauce is simmering get your pasta cooking so it's ready at the same time.Serve with the pasta and top with nutritional yeast or vegan Parmesan. Enjoy!
Tip: I drain off some of the liquid from the tomatoes. Why not add some chilli powder to spice it up a bit. My partner got me to add baked beans to his which weirdly was really nice.
